Behind-the-Bar Etiquette
Quick readBeginner3 min readEditorial draft
The unwritten rules that make a bar feel professional: how you move, how you talk and how you look after your team.
Your bar is a stage
Guests see everything: how you wipe down, how you hold a glass, the face you make when a ticket for six margaritas comes in. Etiquette starts with assuming you are always being watched.
- Hold glasses by the stem or base, never by the rim.
- No phones in sight during service.
- Taste with a clean straw or spoon, out of sight, and never from the guest's glass.
Moving as a team
Space behind the bar is tight. Call out clearly when passing behind someone ('behind!', 'hot!' or 'sharp!' when carrying something dangerous) and return every tool to its home.
With the guest
Acknowledge every arriving guest within seconds, even with eye contact or a quick 'be right with you'. Serve in order of arrival and keep private chats with coworkers away from the bar top.
Key terms
- Behind
- Call used to warn a teammate that you are passing behind them.
- Bar top
- The guest-facing bar surface; always kept clean and dry.
