Mise en Place
Everything in its place: how to set up your station so every drink comes out fast, clean and without thinking.
Your station as a kitchen line
Mise en place comes from the French kitchen: everything prepped and in its place before service. At the bar it's the difference between 40 drinks an hour and 15.
How to set it up
What you use most sits closest. High-rotation bottles in the speed rail; juices and syrups in squeeze or spouted bottles, always in the same order; tools in a fixed spot.
- Juiced, strained citrus, kept cold.
- Syrups labelled with date.
- Garnish cut, covered and chilled.
- Glasses chilling, clean dry towels.
Team consistency
If every bartender sets up the same way, anyone can jump on any station. A photo of the ideal setup taped in the bar helps a lot.
